A porridge with desiccated coconut is an essential food that is easy to prepare, easy to eat and less time consuming. Probably, you might be thinking of how to make it appealing with flavorful, beautiful and colorful toppings such as fruits, superfoods or butternuts. And to make it more tempting you can add or mix these fruits altogether with desiccated coconut to a coconut porridge. Likewise, you can use seeds or nuts for additional flavor.

Here’s an example of a simple, creamy but delicious coconut porridge using desiccated coconut you have to prepare the following:

  • Three (3) table spoon of desiccated coconut (unsweetened)
  • (optional) one-third (1/3) cup of oats
  • (optional) one spoon of butternut
  • (optional) One (1) Banana, blueberry fruit
  • One (1) cup of coconut milk (canned or prepare it from a coconut fruit)
    • To make a coconut milk manually: pour 1 cup of warm water to a shredded coconut meat, you can squeeze it over a bowl to yield about 3 cups and strain it. Repeat it for a third extraction. You can use a cheesecloth if you do not have a strainer.
  • One (1) big bowl
  • (optional) One (1) cup of water

Instruction:

  • In a big bowl, add the 3 table spoon of desiccated coconut and 1/3 cup of oats
  • Add the 1 cup of water
  • Put it on low heat and mix it well
  • Add the half of the 1 whole banana and smashed it (it will serve as a natural sweetener)
  • Mix them altogether, then turn off the low fire when it reached the dense level you prefer
  • Pour 1 cup of coconut milk for a creamy taste.
  • Mix them well.
  • Then, put it on your preferred bowl
  • Then, sliced the other half banana, add it as a topping together with the blueberry
  • (optional) Add the butternut on toppings for additional delectable taste.
